And before that, a fine spirit is created: the Velsecco sparkling wine. Only from exclusive wines can quality pomace be produced. It's no longer a mere afterthought in winemaking. It's no coincidence that pomace brandy is now offered as a select spirit in top restaurants. We know it from Italy as Grappa. But why look so far afield when TreVel
