A hand picked harvest was done and a later selection of the best bunches. Vinification The Fermentation is done in open wooden barrels. Gentle trampling of the skin is carried out during fermentation, at ranges of 18C and 20C, for seven days; to continue with aging in barrels for 2 weeks while malolactic fermentation
