The wine is made using indigenous yeasts, bottled before fermentation is finished, and then disgorged after 6 months on the lees. This year, winemakers Natalie and Ryan disgorged some of these bottles on their Instagram, really proving how they handle each of these by hand. The bottles are also hand labeled.
